Hailing from the oldest brewery in America, Yuengling Traditional Lager is amber colored and darker than the standard American light lager that you see every day. Rich in flavor, but still easily drinkable, this well balanced lager is an east coast favorite.
This beer is an intermediate/advanced style due to the need of a yeast starter (or purchase two packages of yeast) as well as strict temperature control in the low 50s during fermentation as well as a lagering period in a refrigerator. Many brewers in the Northern US and Canada find they can ferment this beer at a steady 50 degrees in a cellar, basement, garage, shed, etc., which is fine as long as stable temperatures are maintained. A diacetyl rest after primary fermentation is recommended, as well as a secondary fermentation.
In lieu of making this clone as a traditional lager, a clean, well attenuating American ale yeast can be used at ale temperatures, which will still make a delicious beer.
For brewers who do BIAB brewing (brew in a bag), the recipe can be done as written. For traditional all-grain set ups, adding a ½ pound of rice hulls is strongly recommended. That will help prevent a stuck mash or sparge due to the flaked corn in the recipe.
