The Red Star Premier Rouge has an alcohol tolerance of 14-16% which it reaches quickly as a fast fermenting yeast. This yeast is great for fermenting Zinfandel, Cabernet, Merlot, Syrah, Pinot, Gamay, and Berry/Cherry wines.
