Dogfish Head’s popular 60, 90, and 120-Minute IPAs came into being through a unique hopping schedule. Instead of adding hops at the usual times, the hops are added continuously throughout the boil. Early on, Sam Calgione used an old vibrating football game to shake the hops into the brew kettle continuously. If you're a child of the 70s, you probably remember that electric football game. It didn't work very well as a game for most of us, but by rigging the game at an angle, the hops dropped in the boil kettle a little at a time, and the East Coast continuously-hopped IPA was born. Later, they revised the equipment and changed the method, but the beers remain classics.
A yeast starter of 2L is highly recommended if using liquid yeast, or purchase two or three yeast packages
