With the cooler fall and winter temperatures available to much of the US, many brewers can get ready for spring and summer by brewing a Classic American Pilsner beer recipe. Unlike commercial mass-produced American lagers, this beer has flavor that will surprise you! There is a great balance between malt and hops, with the crisp finish distinctive of lagers. A yeast starter, or two packages of yeast (if using liquid yeast), is recommended for best results due to the cooler fermentation temperature. Temperature control during fermentation is very important for success with this Pilsner beer kit, and the beer should ferment at 50 degrees for approximately 10-14 days before a diacetyl rest is done (holding at 60-65 degrees for 24-48 hours), and then the beer improves further with lagering. To lager is “to store” in German, and in this case means to hold for approximately 4 weeks at 34-40 degrees before packaging.
