A Belgian IPA is a combination of two well loved styles; taking all of the wonderful, crisp, dry fruitiness of a Belgian Tripel, and combining it with a hop lover's mix of US and continental hops. The result is a moderately-high ABV beer with a light body, huge hop flavor and aroma, and some spice and fruitiness from the Belgian yeast. This can easily become your new favorite beer!
Belgian yeast strains can be finicky at times, but the yeast strains we've selected for this kit will be dependable. The key to this beer is balance; a balance of phenols (those 'spicy' flavors) with esters (fruitiness) from the yeast along with the hops flavor. For best results, sufficient yeast should be used for an optimum pitch rate and fermentation should be started in the mid-60s and held there until near the very end of fermentation, at which time it can be increased to 72-75ºF. As much as 3 packages of yeast should be used, or make an appropriate starter (we suggest using Pilsen DME to create a similar environment for the yeast) Healthy yeast is the most important part of fermentation! If you take care of your yeast, your yeast will take care of you!
