Imperial's Gnome strain is an ideal strain for brewing crystal clear Belgian style ales in a short amount of time. It's extremely flocculant and falls out of suspension quickly after fermentation is complete. It produces a nice phenolic character which goes nicely with caramel, toffee and hops flavors.

I only use Imperial Yeast for fermenting my wort. From A38 Juice to Darkness, their strains flocculate great and kicks off very fast. Gnome is a great choice for Belgian style ales but still prefer their Whiteout strain if doing a Witbier. With the new packaging it’s much easier to pitch but of course if brewing anything over 1.050 I would suggest a starter. Gnome is a good choice for Belgian beer profiles
